Cassava noodles used to be very popular with people in Quang Nam province, especially in Que Son- the hometown of cassava and of Duong Ngoc Anh. However, making cassava noodles had been buried for several years before he left the city for his motherland in 2017 and decided to invest in this traditional career. His Caromi cassava project was born then.

Thanks to the modern equipment, he can lower the manufacturing cost. His cassava noodles look nicer and more popular. So a lot of workers who used to produce cassava noodles follow him to develop their traditional career.

Making cassava noodles is rather elaborate. After 3 days of cassava making flour, the cassava flour is cooked until its colour turns into limpid. Then it is poured into the pressing machine to make noodles. The noodles are dried in the sun for 5-6 hours before they are packaged.
