We clean the sentinel crab by upturning the plastron, pressing the deep hole until their legs and pincers stretch out. Then, sentinel crab’s plastron and spongy egg are thrown out. After being cleaned by brush, the sentinel crabs are mixed with monosodium glutamate, citronella, ginger before  they are cooked.

Frying flour is also a very important ingredient. This flour is made from Cam Nam alluvial soil’ s corn and new rice grown around Thu Bon river. A suitable rate of corn flour, new rice flour and a little of salt should be mixed with a bit of water gradually added until it becomes a well-kneaded dough.

In Hoi An, the sentinel crab cake shop is very simple: a big round basin containing very fresh sentinel crabs, a basin containing the mixed flour and an oil pan on  a red-burning coal oven. The sentinel crab cake is fried and eaten immediately because it is the hotter the more delicious.
